Indian Cookery
Indian cookery is not, in fact, the cusine of a single nationality. It is, rat her, the collective name given to the combitination of different cusines from many different countries.
India is a vast sub-continent, divided from the rest of Asia by the HImalayas, It is about the same size as all the countries of Europe put together, and has been home to an astonishing diversity of different peoples, speaking some 14 manor languages and about 100 dialects. It is hardly surprising, that its cuisine should be correspondigly varied.
The Influence of many different cultures, including those of the Moguls, Portuguese, Persians and British, have, over the years, given rise to many new ideas in Indian cusine. Each region has its own particular cooking traditions, based on its specific climate and soil.
